Coconut Cupcakes

Cakes add sweetness to any type of celebration. One can find variety of cakes these days. Preparing cake at home is really fun thing to do. Coconut Cupcakes can be prepared at home. The recipe is easy and even youngsters can prepare it. Coconut cup cakes are very delicious and is easy to prepare. Ingredients: 1 1/2 cups all-purpose flour, 3/4 teaspoon pure vanilla extract, 3/4 teaspoon pure almond extract, 3/4 cup (1 1/2 sticks) unsalted butter, 1/4 teaspoon baking soda,1/4 teaspoon salt,1/2 teaspoon baking powder,1 7-ounce package flaked sweetened coconut,3 large eggs, 1 cup sugar,1/2 cup buttermilk.



Preparation: In a bowl mix together baking powder, flour, baking soda and salt. Set aside the mixture. Take a large bowl beat butter and sugar for couple of minutes. Then add eggs to it and beat for one minute. Then beat the almond and vanilla extract for a minute. Now take the butter mixture and add flour mixture and buttermilk alternately, then beat in a medium speed for a minute. Now add 1 1/3 cups of the coconut.

After completing the preparation. Take some muffin cups and fill the cup with the battered mixture. Bake the cake in a pre-heated oven in 325 degree for 14 minutes. Now allow the cup cakes to cool down. To highlight the cake highlight the cake with cream cheese icing. Store the cakes for 2 days in a air tight container. The Coconut Cupcakes are ready to eat.
