Ingredients: 1 1/2 cups all-purpose flour, 3/4 teaspoon pure vanilla extract, 3/4 teaspoon pure almond extract, 3/4 cup (1 1/2 sticks) unsalted butter, 1/4 teaspoon baking soda,1/4 teaspoon salt,1/2 teaspoon baking powder,1 7-ounce package flaked sweetened coconut,3 large eggs, 1 cup sugar,1/2 cup buttermilk.
Preparation: In a bowl mix together baking powder, flour, baking soda and salt. Set aside the mixture. Take a large bowl beat butter and sugar for couple of minutes. Then add eggs to it and beat for one minute. Then beat the almond and vanilla extract for a minute. Now take the butter mixture and add flour mixture and buttermilk alternately, then beat in a medium speed for a minute. Now add 1 1/3 cups of the coconut.
After completing the preparation. Take some muffin cups and fill the cup with the battered mixture. Bake the cake in a pre-heated oven in 325 degree for 14 minutes.
