Mango Chutney

Mango Chutney is one of the most delicious chutneys of all. Chutney is a favorite Indian dish that can make any other food items more delectable when taken with it. Chutney adds spice to our regular food regime. The strongly flavored ingredients of vegetables and fruits are used to make chutneys. The combination of traditional ingredients and lovely spices gives the unique taste of chutney. Especially in India chutney is often made to be eaten fresh and therefore no preservatives used. In some of the countries chutneys are preserved for a longer time and this needs to add some preservatives with it.

Mango Chutney can be prepared easily at home. To prepare Mango Chutney you will require the following ingredients:

  • Green Mangoes (Aam)- 1/2 kg
  • Red chilli pepper (Lal Mirchi)- 1 teaspoon
  • Sugar (Cheeni) (2 1/2 heaped cup)- 400-425 grams
  • Salt (Namak)- 4 teaspoons
  • Vinegar (Sirka)- 1 cup
  • Water-1/2 cup
  • Long strips of Ginger (Adrak)- 2 tsps
  • Big Cardamom (Elaichi Moti) powder-3/4 teaspoon
  • Garlic (Lasun)- 2 cloves
  • Raisins (Kishmish) (4 tsps)- 60 grams

For making Mango Chutney you have to first wash the mangoes thoroughly. Then make them dry and peel out the skin. After this, cut the mangoes and remove the stones and make thin and long slices of the mangoes. Now cook the mango slices in water on a low fire with ginger and garlic. Let the mango slices become tender and after that add all other ingredients like, vinegar, red chili pepper, sugar, salt, blanched almonds and cardamoms with this. The whole mixture needs to be stirred till it becomes thick and golden in color. Once it becomes thick, remove it from the fire and add raisins to it and stir well. Now your Mango Chutney is ready. Let it be cool and then put in an airtight jar. It is better to keep it in a cool and dark place to preserve for a longer period.
