  • Salt according to the taste
  • 1 tea-spoon red chilly powder
  • 2 tea-spoon roasted cumin (jeera) powder
  • 300 gms jaggery (gur) grated
  • 200 gms tamarind (imli)

The process of making tamarind chutney ( Imli ki Chutnaey)

5 cups of water is to be mixed with the tamarind. The mixture of water and tamarind is to be cooked on the simmered flame. This is to be cooked for 10 minutes. The mixture is to be stirred for a few minutes and the mixture of garam masala, salt, cumin powder, chilly powder and jaggery are to be added with the mixture of tamarind and water. The prepared mixture is to be cooked for a few minutes till the jaggery dissolves completely and the chutney becomes semi thick. It should be kept in mind that chutney should not become too thick. The pulp of the tamarind is to be removed from the mixture. Tamarind chutney is now prepared to be served. This is an important fact about the tamarind chutney that this chutney becomes more as it cools. So the user of the chutney should check its thickness very consistently.
