You need to grind 50 grams of clean, fresh ginger to a rough paste or small pieces. Then boil about 2 litre of water. As soon as the water starts bubbling add the ground ginger add the sugar. Boil on high flame for approximately two minutes and then switch it off. Next you need to strain the ginger juice through a fine muslin. Then allow it to cool and pour it into another larger vessel. But you need to be very careful not to pour to the end. Thus the sediment and impurities remain which should be thrown away. This concentrate should be refrigerated and can be blended with ice cold water or soda to make a nice summer drink in a very short time.
