These are some of the well known Rajasthani food, Rajasthani food are known for their wonderful blend of spices. They are prepared traditionally and the method of preparing some of the Rajasthani dishes are very old. Many of the Rajasthani dishes are easy to prepare. Here is a recipe for a popular Rajasthani food Jaipuri Mewa Pulao.



Ingredients: 2 cups long grained white rice, 1 cup ghee;25 almonds, blanched and chopped;1/4 tsp nutmeg powder, 2 cups sugar, 1/2 tsp saffron soaked in 1 tsp milk, 25 pistachios chopped, l/2 cup chironji coarsely ground, 4 cups milk, 1 tsp cardamom powder.

Preparation: First soak the rice in water for 2 hours. Then heat ghee in a pan and add the drained rice along with milk in it. Cover the pan and cook on medium heat and stir constantly. When the rice is cooked add nutmeg powders, cardamom, sugar, saffron and sugar. Mix the whole mixture well and bake in a oven in a moderate heat. Serve the Jaipuri Mewa Pulao and enjoy the mouthwatering dish.
